A Simple Delicious Christmas Turkey Recipe

Surely you must agree that there is actually nothing worse than trying to swallow down a dry Turkey…  My mum makes the best Turkey and here is her recipe.

Ingredients

5 or 6Kg turkey giblets removed
1 onion  quartered.
1 quantity of stuffing
85g of butter ,softened
Fresh bay leaves to flavour and serve
1 whole nutmeg
10 streaky bacon rashers
1 Glass of red wine

 Granny’s Method

Heat oven to 190/fan 170c/gas5.

Put the onion and a large sprig of bay into the cavity between the legs

Pack half the stuffing into the neck pushing down towards the breast

Secure the neck when stuffed with a skewer and tie the turkey legs neatly

Put a large extra wide foil in a baking tray place the turkey on top smear the breast with butter

Grate over half the nutmeg and season well cover the turkey with the bacon and pour over the red wine

Then loosely bring up the foil and seal into a parcel.

Roast in the oven 20 min per kilo plus 90 min.

90 min before the end of cooking remove bacon plus fat .Remove foil and baste return to the oven for 90 minutes.

Brussel Sprouts with Bacon is the Future

Anyone else hate Brussel sprouts? I only eat them because I refuse to let them defeat me on Christmas day.

Over the last few years I have started to cook Brussel Sprouts with Bacon and I would go as far to say that they actually taste nice.

Ingredients

4 strips thick-cut bacon

2 tablespoons butter

1 pound brussels sprouts, halved

Salt and freshly ground black pepper

1 Onion

Carla’s Method

Cook bacon in a large frying pan over medium-high heat until crispy.

Remove and place on a paper towel then once dry roughly chop the bacon.

Melt butter in to the same pan with the bacon fat over high heat.

Add onions and Brussels Sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes.

Finally season with salt and pepper, to taste, and toss bacon back into pan. Serve immediately.

Orange Jelly Pumpkins

I have been thinking about some fun Halloween food that I can make George this October for his desserts. I wanted to keep it relatively healthy so I decided to try some Orange Jelly Pumpkins, they are easy to make and we ALL love them.

Ingredients

  • Oranges
  • Orange jelly
  • Knife to carve (I used the Pumpkin kit from Asda £5)

Carla’s Method

  • cut the top of the orange off
  • Use a knife to hollow out
  • Once you have got as much Jelly as you can out then carve a face on the side of the orange and then fill with Jelly

and there you have it… Your very own Orange Jelly Pumpkin!!!!

Easy Pumpkin Soup Recipe

This Halloween I have decided to have a little Halloween Party for the kids so I am going to be making one of my all time Halloween Favourites for the mums at the party – Homemade Pumpkin Soup. My easy pumpkin soup recipe is a perfect winter warmer.

Ingredients 

  • 1 kg of pumpkin, chopped into large chunks (skin and seeds removed)
  • 2 medium onions sliced
  • 2 cloves of garlic
  • 3 cups chicken or vegetable stock
  • 250mls milk
  • Salt and pepper to season

 

Carla’s Method

  • Place all ingredients (not salt and pepper) in a saucepan and bring to the boil, reduce heat and leave to simmer until the pumpkin is soft. Stirring occasionally.
  • Remove from the heat and let cool before blending in a blender unless you have a stick blender in which you can blend straight away in the pan. Blend until smooth.
  • Season to taste with salt and pepper.
  • Why not try adding cream? Or yoghurt? Either before blending or dollop on once served.

Pumpkin Spice Latte

Now if you are a caffiene addict like myself and you like getting in the mood for the Halloween Festivities then my Pumpkin Spice Latte will be right up your street.

Ingredients

  • 2 tablespoons of cooked pumpkin
  • 1 cup of coconut milk or almond milk
  • 1 tablespoon of maple syrup or honey
  • 1/4 tablespoon of vanilla extract
  • 1/4 tablespoon pumpkin pie spice
  • 1/4 cup brewed coffee or espresso

Carla’s Method

  • blend together syrup, pumpkin pie spice, vanilla extract and pumpkin.
  • Pour into a pan and add the milk, simmer for about 5 mins until milk is hot.
  • Pour the coffee or espresso into a large mug and add the milk mixture.
  • Top with whipped cream or just even sprinkle with pumpkin pie spice.

 

Now sit down, kick back and slurp away you will love my Pumpkin Spice Latte.
