Easy Lamb Rogan Josh Recipe
This is my favourite easy lamb rogan josh recipe. I absolutely love making this for our dinner in the cold winter evenings. I often have enough to freeze us a dinner for the next week too.
Serves 4
Ingredients
625 g Of boneless lamb cut into chunks
2 large onions sliced
3 crushed garlic cloves
2 tsp of grated ginger
2 cinnamon sticks
6 green cardamom pods
4tbs of curry paste (medium)
400g of chopped tomatoes
6tbs of tomato paste
4 medium potatoes cut into chunks
1 tsp of sugar
400ml of lamb stock
Salt and pepper
2tbs of sunflower or vegetable oil
Fresh coriander to garnish
Yoghurt to drizzle
Carla’s Method
Heat 1tbs of oil in a heavy based casserole dish add the lamb cook in batches until browned.
Remove the lamb with a slotted spoon and set aside.
Add the remaining oil and add the onions and cook over a medium heat for 10 – 12 minutes until the onions are softened and slightly brown.
Add the garlic ,ginger,cinnamon and cardamom pods.
Stir fry for 2 to 3 minutes then add the curry paste and lamb.
Stir in the tomatoes ,tomato paste ,sugar,stock and potatoes.
Season well and bring back to the boil.
Reduce the heat cover and simmer gently for 2-2.30hrs until the lamb is tender .
Remove from the heat and garnish with coriander.
Enjoy serve with rice and drizzle with yoghurt.
