Baby Weaning Fish Pie
This was a firm favourite in our house, especially in the cold winter months. I would make a big batch and freeze it in small tubs for Georges evening meal.
Ingredients
150 grams of boneless, skinless cod fillet, chopped.
450grams white potatoes peeled and chopped.
20grams of butter
1 onion peeled and diced
3 tablespoons of plain flour
250mls milk
40 grams of grated cheddar cheese
2 tablespoons of sweetcorn.
Carla’s Method
Begin by placing the potatoes in a large pan, and water, boil for about 20 minutes until potatoes are soft. Drain, then mash, mix in a small amount of milk and butter.
Pre heat the oven to 200C
Melt the butter in a saucepan, fry the onion until soft, add the flour and mix in the milk. Bring to the boil and simmer for about 2 minutes. Add the cheese, stir, then add the cod and sweetcorn.
Spoon the fish mixture into a oven proof pan, top with the mashed potatoes, place in the oven for about 15 minutes until bubbling.
