Orange Muffin Recipe
The boys in my house love Orange Muffins, I try not too make them too often as I have previously found myself eating over half before Danny has even got home from work but when I do… I have 2 very happy boys.
Ingredients
300g of plain flour
115g of softened butter
150g of white sugar
2 large oranges
2 large eggs
250ml of buttermilk (you can use half milk half natural low fat yoghurt)
175g of brown sugar
1 teaspoon of baking soda
Carla’s Method
Preheat oven 180 fan 190 ( gas Mark 5)
Grate the zest from both oranges .Cream the butter and sugar together in a mixing bowl .
Add the eggs and mix till it is all combined .Sieve the flour and add to the mixture.
Gently mix in the flour not to much mixing or the muffins will be tough.
In a jug mix the buttermilk and baking soda and add to the mixture mix until just combined
Add the orange zest be careful not to over mix.
Grease a 24 small muffin tin or a 12 fill each one 2 thirds full of the mixture.
Bake in the oven for 12 to 17 minutes
