Potatoes with Mushrooms and Feta
Ingredients (serves 4)
- 4 baking potatoes
- Butter
- 200 grams of sliced mushrooms
- 2 garlic cloves
- 100 grams feta crumbled
Carla’s Method
- preheat the oven to 220 C/ 200 C fan/ gas mark 7.
- Prick the potatoes and stick them in the microwave for 8 minutes on high.
- Cut them in half and scoop out the middle, put them in a roasting tin cut side up.
- Bake for about 20 mins or until cooked through.
- While the potatoes are in the oven melt butter in a frying pan, add the mushrooms with a pinch of salt for about 10 minutes or until they start to colour.
- Crumble in the feta. Season with black pepper.
- Once the potatoes are ready, scoop the mushroom and feta mix in them drizzle with pesto and a sprig of parsley.
