Shepherds Pie
Now, now… come on!!! Who doesn’t love a warm shepherds pie on a cold frosty evening?
Ingredients (serves 4)
4 large potatoes, peeled and cubed
1 tablespoon butter
Small amount of milk
1 large onion, finely chopped.
grated Cheddar cheese.
salt and pepper to taste
1 tablespoon olive oil
3 carrots, peeled and diced
450g minced lamb (or for cottage pie, replace the lamb with beef)
2 tablespoons plain flour
200ml lamb stock
Carla’s Method
Bring a large pot of water to the boil.
Add potatoes and cook until tender but still firm, for about 15 minutes. Drain and mash. Mix in butter, Season with salt and pepper to taste.
Preheat oven to 200 degrees C
Heat oil in a large frying pan. Add onion and diced carrots (alternatively you can add sweetcorn, peas or mushrooms) cook until tender. Add mince meat and cook until well browned. Stir in flour and cook 1 minute. Add lamb/beef stock. Bring to a boil, reduce heat and simmer for 5 minutes (again alternatively you can just add a pre mixed packet)
Spread the mince mixture into an even layer on the bottom of an ovenproof dish. Top with the mashed potato mixture and sprinkle with grated cheese.Bake in the preheated oven for 30 minutes, or until golden brown.
