My Simple Chilli Con Carne Recipe
My simple Chilli con carne recipe is always a favourite in our house, especially in the winter.
Serves 4-6
This Chilli Con Carne Recipe takes 40 minutes to cook
Ingredients
500g of minced beef
1 chopped onion
1 red pepper ,deseeded and cut into strips
2 crushed garlic cloves
1tsp of ground cumin
1tsp of hot chilli powder (or mild depending on taste )
1tsp of paprika
1tsp of oregano
400g can of chopped tomatoes
2tbsp of tomato purée
150ml of full bodied red wine or beef stock
400g can of kidney beans (drained )
1tbsp of Worcester sauce
Salt and freshly ground black pepper
Carla’s Method
Dry fry the beef and onion in a medium pan for 10 minutes until the meat is browned and the onion is softened.
Add the red onion ,garlic spices and oregano and fry for 3 minutes then stir in the chopped tomatoes and tomato purée.
Pour in the red wine or beef stock and drained kidney beans.
Bring to the boil and season to taste using Worcestershire sauce if desired.
Simmer for 30 minutes then enjoy, best served with boiled rice
Serve with boiled rice
