Surely you must agree that there is actually nothing worse than trying to swallow down a dry Turkey… My mum makes the best Turkey and here is her recipe.
5 or 6Kg turkey giblets removed
1 onion quartered.
1 quantity of stuffing
85g of butter ,softened
Fresh bay leaves to flavour and serve
1 whole nutmeg
10 streaky bacon rashers
1 Glass of red wine
Heat oven to 190/fan 170c/gas5.
Put the onion and a large sprig of bay into the cavity between the legs
Pack half the stuffing into the neck pushing down towards the breast
Secure the neck when stuffed with a skewer and tie the turkey legs neatly
Put a large extra wide foil in a baking tray place the turkey on top smear the breast with butter
Grate over half the nutmeg and season well cover the turkey with the bacon and pour over the red wine
Then loosely bring up the foil and seal into a parcel.
Roast in the oven 20 min per kilo plus 90 min.
90 min before the end of cooking remove bacon plus fat .Remove foil and baste return to the oven for 90 minutes.
