Halloumi Cheese and Sweet Pepper Salad
Halloumi Cheese and Sweet Pepper Salad (Serves 2)
I am a huge fan of Halloumi Cheese. I love how it is packed with flavour and the fact it has a high melting point which means it is often a favourite of mine when it comes to barbecue season or when I fancy a salad but want a bit of warmth in it. Today I have my friends over for lunch and we all are trying to be healthy so thought I would throw together one of my old time favourites.
Ingredients (Serves three)
- 1 Block of Halloumi Cheese (Aldi)
- Half a pack/full pack rocket, watercress or spinach leaves (Aldi)
- Pack of sweet peppers (Aldi)
- 2 spring onions (Aldi)
- Cherry tomatoes (Aldi)
- Olive oil (Aldi do a lovely Garlic fused Olive oil but any Olive oil will do)
- Lemon (Aldi)
- Oregano
- Chilli flakes (optional extra)
- Salt and ground black pepper to taste
Carla’s Method
My Salad Preparation
- Place your chosen salad leaves in to a large bowl.
- Add the sliced peppers, chopped spring onions and tomatoes.
- Toss the salad
My Dressing Preparation
- Add to a bowl;
- 2 tablespoons of olive oil,
- 2 teaspoons of lemon juice
- 1 teaspoon dried oregano
- Add salt and ground black pepper to taste
- Add to salad and toss thoroughly
SET YOUR SALAD ASIDE UNTIL YOUR HALLOUMI IS READY
- Drain the juices of the halloumi cheese and pat dry gently with a paper towel. Cut the cheese into 6-8 chunky slices.
- Pour in 1 tablespoon of olive oil in a pan over high heat.
- Wait until the pan is hot then add the halloumi slices
- Cook 1-2 minutes each side until nicely browned
- Add Halloumi on top of the plated salad
- Finally sprinkle over some chilli flakes (if you wish)
