Vanilla Cupcakes – Makes 12 Cupcakes
Ingredients for the cupcakes:
175g, Unsalted Butter
175g, Caster Sugar
175g, Self-Raising Flour
2 teaspoons, Vanilla Extract
3, Large Eggs
Ingredients for the buttercream:
* 250g, Salted Butter
* 500g, Icing Sugar
* 2 tablespoons, Vanilla Extract
Method for Vanilla Cupcakes:
Preheat oven to gas mark 3.
Put the butter and caster sugar into a bowl and mix together until it is light and fluffy.
Pour the eggs and vanilla extract into the same bowl. Mix together until it makes a yellow batter.
Pour the self raising flour into the same bowl until the mixture is smooth. You may need to scrape the sides of the bowl in between mixing the batter.
Line the cupcake tray with cupcake liners.
Pour the mixture into the cupcake liners.
Bake in the over for 30 minutes.
Insert a toothpick in the cupcakes. If it comes out clear, the cupcakes are done.
Leave to cool for 15 minutes.
Put the butter, icing sugar, and vanilla extract into a bowl and mix together until you get a pipe able consistency.
You can now decorate your cupcakes.
