Ingredients (serves 4)
3 tablespoons of olive oil
8 rashers of streaky bacon
2 small head broccoli, broken.
2 tablespoon of runny honey
2 tablespoon of mustard
2 tablespoon of balsamic vinegar
1/2 cup of Parmesan
Heat 1 tablespoon of olive oil in a frying pan and fry the bacon for about 3 minutes or each side or until crispy.
Place the broccoli in boiling for about 3-4 minutes, until tender, then drain.
While the bacon and broccoli are cooking whisk the honey, mustard, vinegar and remainder of oil together with a pinch of salt.
Mix the dressing in with the broccoli and split between 4 serving plates.
Place 2 rashers of bacon on top of each and season with Parmesan.
