Banana and Raisin Bread Recipe
I am sick to death of throwing out food especially brown banana’s. Do you ever find you either have not enough bananas or too many? What is the right number of bananas to buy for a week???? HELPPPPP!!!
Anyway, in my new quest to avoid throwing out brown Banana’s, I have decided that every Friday before our weekly Aldi food shop (if we have bananas left) – George and I will bake a Banana and Raisin bread for the weekend.
The beauty of this recipe is it is so easy and it only takes about 15 minutes to prepare!!!!
Carla’s Banana and Raisin Bread Recipe
Ingredients
140g Butter for the bread plus a little extra to coat the tin
140g caster sugar
3 eggs, beaten
140g self-raising flour
1 tsp baking powder
2 large bananas mashed
4 cartons of Raisins
Carla’s Method
Heat oven to 180C/160C fan/gas 4.
Butter a loaf tin and line the base and sides with baking parchment.
Whisk the butter and sugar until light and fluffy.
Slowly add the eggs with a little flour and whisk up
Fold in the remaining flour, baking powder and the mashed bananas and raisins.
Pour into the tin and bake for about 30 mins until Golden,
Cool in the tin for 10 minutes and make yourself a well-deserved cup of tea.
